Gluten Free Ground Rice Pudding

One of the classic desserts my family and I missed when we became gluten free was Semolina Pudding. That was until we discovered ground rice pudding. It has the same texture and consistency as semolina and this recipe is perfect with a sprinkling of soft dark brown sugar or a dollop of jam.
Ingredients (serves 4):
50g Ground Rice
600ml Milk
25g Caster Sugar
Knob of Butter to prevent a skin forming.
Method 1: On the Hob:
1. Mix ground rice and milk into a pan, gently heat, stirring continuously.
2. As the mixture thickens, add the sugar and butter stirring the mixture until the pudding is quite thick.
3. Poor the puddings into bowls and serve…enjoy!
Method 2: In a microwave:
1. Mix ground rice, milk, butter and sugar into a large microwavable bowl with a secure lid.
2. If your micrwave has a ‘SIMMER’ setting, simmer for 10 minutes, stir, then simmer for a further 10 minutes. The simmer option prevents the pudding from boiling over.
3. If your microwave doesn’t have this setting, cook for 2 minutes at a time, stirring in between, and always watch the pudding to prevent it boiling over, until it is quite thick.
4. Stir once more before serving.
