Cheese Cake, Simple but Delicious

This Lemon and Lime Cheese Cake is simple to make but absolutely delicious, there is no cooking required and can be ready in 4 hours…
Ingredients:
100g Butter – melted
175g Digestive biscuits (or Ginger biscuits if you like).
25g Grape Nuts (cereal available at Scoopaway. This is optional, if you are not using substitute for 25g of biscuits).
2 Unwaxed Lemons – the zest and juice is required.
2 Unwaxed Limes – the zest and juice is required.
1 can condensed Milk (397g)
400g Cream Cheese.
One large (23cm) sprung loaded cake tin is required.
Melt the butter in a large sauce pan. Whilst you’re waiting crush the biscuits and mix with the grape nuts, once the butter has melted mix in the crushed biscuits and grape nuts. Tip into the sprung loaded cake tin and flatten down with a potato masher or fork, then put in the fridge to chill.
To make the topping, mix all of the ingredients into a bowl, beat well (or put into your food processor and mix well). Pour this out onto the base and chill for at least 4 hours.
Its as easy as that.
